Pine Nut Pesto

Once you make homemade pesto, you will never again settle for a jar of that store-bought stuff again. This recipe is great as a topping for just about everything - pasta, pizza, drizzled over veggies, mixed into chicken salad, etc.

Ingredients 

¼ Cup Pine Nuts
1 Cup Fresh Basil
3 Cloves Garlic
¼ Cup Parmesan
Salt & Pepper to taste
¼ Cup Olive Oil
Food processor

    Directions

     

    Add the pine nuts to pan and toast over medium heat until fragrant (this should only take 3-4 minutes). The nuts can burn very quickly, so stay near by and give them a little shake about every thirty seconds to make sure they don’t burn.

    Once nuts have been toasted add them to the food processor with the basil, garlic, parmesan, and salt & pepper. Process until finely minced. Continue to let food processor run as you slowly pour in the olive oil. The texture should become smooth. If needed, add more olive oil until desired texture is achieved.
